“You can’t get much simpler than this recipe. It’s easy, simple to cook and if your in the mood for salmon then this is all you need”

 

PREPARATION TIME: 5 mins

COOKING TIME: 14 mins

SERVES: 1

 

Ingredients:

  • 2 (3 ounce) salmon fillets, with skin
  • 1 knob of butter
  • Sea salt
  • pepper
  • Lemon juice
  • 2 tomatoes
  • Spring onion – 1 stem
  • Twig of rosemary

 

Method:

  1. Rinse the salmon fillets and pat dry with paper towel.
  2. Season the fillets with salt & pepper
  3. Heat a frying pan until hot. Add the butter and allow to melt and coat the pan
  4. Add the salmon fillets skin side down. Squeeze over a little lemon juice. Fry 3-4 minutes, then turn the salmon over and fry for further 2-3 minutes., or until cooked through. Squeeze a little more lemon juice over them.
  5. Remove from pan and plate.

 

Suggestion: serve with sliced tomato, sprinkling of green spring onion and rosemary.
