INGREDIENTS:

  • 7 large eggs
  • 500g pork mince
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 tsp oregano
  • 1 tsp honey
  • Pinch of salt
  • 2 tsp ground almonds
  • Knob of butter

 

METHOD:

  1. Boil 6 eggs in a pan. When done to your liking put in a bowl of cold water, wait 10 mins and then peel the shells off.
  2. Turn your oven on to 200 C
  3. In a large bowl add the pork mince, paprika, pepper, oregano, honey and salt – mix together
  4. Once mixed remove from bowl and shape mixture in 6 balls and then flatten into a patty shap in your hand. Wrap each one around each eggs – making sure it’s completely wrapped with no gaps.
  5. Crack open your last egg and whisk it in a bowl – dip each scotch egg in it – fully cover. Ten roll each in the ground almonds
  6. Then in a frying pan on a medium heat melt the butter and then add each scotch egg — brown each for 2 mins.
  7. Then transfer all the scotch eggs to a baking tray (lined with baking foil)
  8. Cook in the oven for 25 mins – or until meat cooked through
  9. Serve straight away.
