Coconut-Lime-Chicken-ingredients

INGREDIENTS:

  • 2 skinless chicken breasts (butterflied)
  • 1/2 cup full fat coconut milk
  • 1 lime (zest + juice)
  • 1/4 tsp paprika
  • bay leaf
  • 1 tsp coriander powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 2 tbsp honey
  • Fresh coriander leaves, chopped
  • 1 tbsp coconut oil

 

METHOD:

Marinade:

In a large bowl combine the 1/2 cup cocnut milk, lime juice & lime zest, melted honey, salt, pepper, paprika, bay leaves powder, coriander powder.

Stir all together. Add the chicken to the bowl , making sure it is covered all over by the marinade. Leave in the bowl for 45 mins (keep at room temperature)

 

Cooking:

  1. Put a large frying pan over a medium heat. Add the coconut oil and when melted make sure it cover the surface and then add the chicken.
  2. Cook the chicken 6 minutes each side. Remove from pan and place on a separate dish. Check that chicken is cooked through.
  3. Pour the remaining marinade from the bowl into the large pan and heat until simmering. Then add the chicken back and cook for 4 minutes each side.
  4. Put the chicken onto a plate and pour the liquid in the pan on tip of it.Sprinkle with coriander leaves and serves.
