INGREDIENTS:

  • 3 eggs
  • Half tsp black pepper
  • butter
  • Half red onion – diced
  • 3 cherry tomatoes – halved
  • 1 tablespoon sundried tomatoes – chopped into small pieces
  • Basil leaves – shredded
  • Half tsp Italian herbs

 

METHOD:

  1. Turn your grill on to high.
  2. Add the eggs to a mixing bowl and beat them together with a fork. Then add pepper.
  3. Add butter and diced onions to a non stick frying pan and cook the onions until soft & browned. Then set aside.
  4. Pour the beaten eggs into the frying pan (over a medium heat) – covering the base of the pan.
  5. Add the onions, cherry tomatoes, sun-dried tomatoes, basil and italian herbs into the pan and cook through for approx 5 minutes or until most of the omelette is set.
  6. Move the frying pan under a grill for 4-6 mins or until cooked through with a golden colour.
  7. Remove from under grill, put onto a plate and serve with some basil.
