Ingredients:

  • 2 avocados
  • 1/2 small red onion, finely diced
  • 1 small tomato, finely diced
  • Half red pepper pepper – finely diced
  • 1/4 bunch coriander shredded
  • Juice of one lime
  • 1/2 teaspoon pepper
  • 1 large boiled carrot – diced
  • 1 carrot
  • 1 cucumber

 

Method:

  1. Slice the avocado longways and remove the stone – scoop out the flesh into a mixing bowl.
  2. Add onion, tomato, pepper, red pepper, coriander, boiled carrot, pepper and lime juice.
  3. Mix with a fork until you reach the desired texture for you guacamole.
  4. Peel the carrot and slice into sticks.
  5. Slice the cucumber into sticks
  6. Dip one into the guacamole to taste and adjust seasonings as necessary.
