INGREDIENTS:

  • 1 egg
  • 1 egg white
  • 1/2 cup almond flour
  • 2 tbsp coconut milk
  • 1 medjool date diced into small pieces
  • 2 tbsp shredded coconut
  • 1 tbsp honey
  • 1/4 cup shredded carrots
  • 1 tsp cinnamon powder
  • 2 tbsp sultanas
  • 1/4 tsp baking powder

 

METHOD:

  1. Heat oven to 200 C
  2. In a bowl mix the egg and the egg white together and whisk
  3. Add all the other ingredients into the bowl and mix
  4. Press mixture into muffin tray
  5. Place into oven for 25 mins. Poke a skewer into each until it comes out clean – if not return to oven
  6. Place on a wire rack and sprinkle some shredded coconut over the top
  7. Leave for 10 mins to cool and then serve
