Ingredients:

  • 8 eggs
  • 1 small broccoli – chopped
  • 1 cup diced onion
  • 5 slices of cooked bacon – finely chopped
  • 2 pieces of sundried tomatoes – finely chopped
  • 1 tbsp mixed italian herbs
  • Half tsp pepper, to taste
  • Lard or butter

This recipe makes 5 large muffins or 8 small ones.

 

Method:

  1. Preheat oven to 350 degrees F or 180 C.
  2. Pour the chopped broccoli in a blender and squeeze as much water out as possible. Then mix in the italian herbs
  3. Spread the broccoli over a baking sheet on a tray and put in the oven for 15mins
  4. Crack open the eggs and put into a bowl and whisk
  5. Add the broccoli and all other ingredients into the bowl – bacon, herbs, pepper, sundried tomatoes, diced onion – and mix
  6. Pour mixture into a greased (using lard or butter) muffin pan, the mixture should evenly fill 8 muffin cups.
  7. Bake 30 minutes, or until browned – check with a toothpick inserted in the middle, making sure it comes out clean.Serve

 

Note: You can put any leftovers into your fridge and eat over the next few days.
