INGREDIENTS:

  • 2 avocado
  • 2 hard boiled eggs
  • 2 strips of bacon, cooked until crispy
  • 1/2 small onion – diced
  • 1 tsp ground garlic
  • 1/2 tsp cayenne pepper

 

METHOD:

  1. Slice the avocados in half longways – removing the stone
  2. With a spoon scoop out the green avocado flesh and put into a bowl
  3. Cut bacon into small bits and add to bowl.
  4. Boil 2 eggs for 4-5 mins. Remove shells and mash up with a fork. Add eggs to bowl
  5. Add diced onion and garlic to bowl and mixed it all together
  6. When mixed scoop the mixture back into the avocado shells, sprinkle with cayenne pepper and serve on a plate
